Description

These refreshing watermelon bites combine juicy watermelon with creamy goat cheese, fresh basil, crunchy pistachios, and a drizzle of balsamic vinegar for an elegant appetizer. Perfect for entertaining or a light snack, they deliver a delicious balance of sweet, tangy, and savory flavors.


Ingredients

12 slices watermelon (about 2 cm thick), cut into equally sized bite-sized pieces

50 g goat cheese (chèvre)

23 tbsp Greek yogurt or crème fraîche

45 basil leaves, finely sliced

56 pistachio nuts, roughly chopped

Thick balsamic vinegar, for drizzling (optional)


Instructions

  1. Whisk the goat cheese and Greek yogurt or crème fraîche together until smooth and creamy.
  2. Taste and adjust the balance of cheese or yogurt to achieve the desired texture and flavor.
  3. Refrigerate the goat cheese cream while preparing the watermelon.
  4. Cut the watermelon into equally sized cubes or bite-sized pieces and arrange them on a serving plate.
  5. Top each watermelon piece with a small amount of chilled goat cheese cream.
  6. Sprinkle the sliced basil evenly over the bites.
  7. Add the chopped pistachios for crunch.
  8. Drizzle with thick balsamic vinegar if using and serve immediately.
