Description

This healthy peach cherry salsa is fresh, vibrant, and naturally sweet with juicy peaches, ripe cherries, lime juice, cilantro, and a touch of jalapeño heat. It is a refreshing no-cook recipe that works perfectly as a dip, topping, or light summer side dish.


Ingredients

2 peaches, diced into 1/2-inch pieces

1 cup cherries, halved and pitted

2 garlic cloves, minced

1 large handful fresh cilantro, finely chopped

1 jalapeño pepper, seeded and finely chopped

1/2 small red onion, finely diced

Juice of 1 1/2 limes

Zest of 1 lime

Salt, to taste


Instructions

  1. Mince the garlic and place it into a large mixing bowl.
  2. Dice the peaches into 1/2-inch pieces and add them to the bowl.
  3. Halve and pit the cherries, then add them to the peaches.
  4. Finely chop the cilantro, jalapeño, and red onion, then stir them into the fruit mixture.
  5. Pour in the lime juice and add the lime zest.
  6. Season with a small pinch of salt and adjust to taste.
  7. Gently fold everything together carefully to keep the fruit intact.
  8. Refrigerate the salsa for at least 15 minutes to allow the flavors to blend.
  9. Stir gently before serving and adjust seasoning if needed.

Notes

Add diced mango for extra tropical sweetness.

Leave some jalapeño seeds in for more heat.

Mix in diced avocado for a creamy texture.

Add a small drizzle of honey if the fruit is not sweet enough.

Fresh mint can be substituted for cilantro.

Black beans or corn can make the salsa more filling for bowls and salads.

Store in an airtight container in the refrigerator for up to 24 hours.

This salsa is best served chilled and is not recommended for freezing.
