Ingredients
1 large egg
3/4 cup almond flour
3/4 cup unsweetened coconut flakes
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon dried parsley
1 teaspoon salt
1 1/2 lbs chicken tenders (or boneless skinless chicken breasts cut into strips)
Instructions
- Preheat the oven to 390°F. Line a baking sheet with parchment paper or lightly coat it with non-stick cooking spray.
- Whisk the egg in a shallow bowl until smooth.
- In a separate shallow bowl, combine the almond flour, coconut flakes, paprika, garlic powder, dried parsley, and salt.
- Dip each chicken tender into the egg, coating it completely.
- Transfer the chicken to the almond flour mixture and coat evenly on all sides.
- Repeat until all chicken tenders are breaded.
- Arrange the coated tenders on the prepared baking sheet and lightly spray with oil.
- Bake for 15 to 20 minutes, or until the coating is lightly golden and the chicken reaches an internal temperature of 165°F.
- Serve warm with your favorite dipping sauce.
Notes
Add cayenne pepper or onion powder to the breading for extra flavor.
Italian seasoning can be added for a more herb-forward variation.
Serve with honey mustard, ranch, barbecue sauce, or garlic aioli.
For a nuttier flavor, mix finely chopped almonds into the breading.
