Description
Cannellini Bean Shakshuka is a hearty one-pan meal featuring creamy white beans, rich tomato sauce, perfectly cooked eggs, and soft burrata. Packed with Mediterranean-inspired flavors, it is nourishing, comforting, and easy enough for any day of the week.
Ingredients
2 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 can (400 g) cannellini beans, drained and rinsed
2 cups crushed tomatoes
1 tablespoon tomato paste
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon chili flakes, adjust to taste
1 teaspoon dried oregano
Salt, to taste
Black pepper, to taste
1 small red bell pepper, sliced
4 large eggs
100 g burrata cheese
Fresh parsley or cilantro, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft and lightly golden.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the tomato paste and cook briefly, stirring constantly.
- Pour in the crushed tomatoes and stir well. Add the paprika, cumin, chili flakes, oregano, salt, and black pepper.
- Simmer the sauce gently for 5 minutes to allow the flavors to develop.
- Stir in the cannellini beans and sliced red bell pepper. Simmer for about 10 minutes until the sauce thickens slightly.
- Using a spoon, create four small wells in the sauce and crack an egg into each well.
- Cover the skillet and cook over low heat until the egg whites are set and the yolks remain soft, about 5 to 7 minutes.
- Tear the burrata into pieces and place it over the hot shakshuka.
- Garnish with chopped parsley or cilantro and serve immediately.
Notes
Substitute cannellini beans with butter beans or chickpeas if desired.
Add spinach, kale, or zucchini for extra vegetables.
Use smoked paprika for a deeper, smoky flavor.
Feta, mozzarella, ricotta, or goat cheese can replace burrata.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freeze the sauce and bean mixture without the eggs and cheese for up to 2 months.
Serve with crusty bread, pita, or toasted sourdough for a complete meal.
