Description

Texas Toast Sloppy Joes are a fun, open-faced twist on the classic sloppy joe, featuring a savory beef filling piled onto garlic Texas toast and topped with melty cheese for a quick, comforting dinner.

Ingredients

1 lb lean ground beef

½ onion, diced

½ green bell pepper, diced

½ red bell pepper, diced

2 garlic cloves, minced

1 cup ketchup

1 tsp chili powder

1½ tbsp tomato paste

½ tbsp Worcestershire sauce

2 tbsp brown sugar

¾ cup water

8 slices frozen garlic Texas toast

4 slices Colby jack cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, cook the ground beef, onion, and bell peppers until the beef is browned and crumbled. Drain excess grease.
  3. Add the garlic, ketchup, chili powder, tomato paste, Worcestershire sauce, brown sugar, and water to the skillet. Stir well.
  4. Simmer the mixture over medium to medium-high heat until thickened, about 5–7 minutes.
  5. Place the Texas toast slices in a single layer on a baking sheet and bake for 3–4 minutes until thawed and slightly softened.
  6. Remove the toast from the oven and press a shallow indent into each slice.
  7. Spoon the sloppy joe mixture evenly onto each piece of toast.
  8. Cut the cheese slices diagonally and place one piece on top of each sloppy joe.
  9. Return the baking sheet to the oven and bake for another 3–4 minutes, until the cheese is melted.
  10. Serve immediately while hot.

Notes

Toast the bread lightly before adding the filling to prevent sogginess.

The sloppy joe mixture can be made ahead and reheated.

Swap ground beef for turkey or chicken for a lighter version.

Cheddar or pepper jack cheese works well as a substitute.
