Description

These Sweet and Sticky Steak Bites are tender, smoky, and coated in a deliciously sweet and savory glaze. Made with filet steak and seasoned with a blend of flavorful rubs, they are perfect for grilling season, tailgates, or any special occasion. The combination of sweet brown sugar, butter, and BBQ sauce creates an irresistible dish that’s sure to be a crowd-pleaser!


Ingredients

4 beef filet steaks

2 tbsp Hey Grill Hey Beef Rub

2 tbsp Hey Grill Hey Sweet Rub

2 tbsp Hook’s Midnight Rub (or any charcoal rub)

1/2 cup Hey Grill Hey Everything Sauce (or your favorite BBQ sauce)

1/4 cup dark brown sugar

1/4 cup butter


Instructions

  • Preheat Smoker:
    Preheat your smoker or pellet grill to 225°F (107°C). Oak wood works great for this recipe.

  • Prepare the Steak:
    Cube the steak into 1.5-inch pieces, trimming off any silverskin or large fat pieces.

  • Season the Steak:
    Mix the Beef Rub and Sweet Rub together. Dip each steak cube into the charcoal rub, then coat each piece in the rub mixture to ensure it’s fully seasoned.

  • Smoke the Steak:
    Place the seasoned steak cubes onto a cooling rack and smoke for 1 hour, or until they reach an internal temperature of 120°F (49°C).

  • Sauce the Steak:
    Move the steak bites to a cast-iron skillet, pour over the BBQ sauce, and sprinkle with brown sugar. Dot with butter for extra richness.

  • Finish Smoking:
    Return the steak bites to the smoker and cook until the internal temperature reaches 130°F (54°C), approximately 20-30 minutes more.

  • Serve:
    Let the steak bites cool slightly before serving. Optionally, serve with extra BBQ sauce on the side.


Notes

Variations:

Use Different Meats: Swap the filet for sirloin or strip steaks for a different texture and flavor.

Add Spice: Add chili flakes or a dash of hot sauce to the rub for a spicy kick.
