Description

This creamy Roasted Eggplant Soup combines smoky oven-roasted eggplants, tender onions, garlic, warm cumin, and paprika with a refreshing splash of lemon juice and fresh parsley. Naturally dairy-free and full of Mediterranean-inspired flavor, this comforting soup is delicious on its own or topped with crispy roasted chickpea croutons for extra crunch.

Ingredients

3 medium globe eggplants (approximately 2 ½–3 pounds)

2 tablespoons olive oil

1 large onion, sliced

½ teaspoon ground cumin

½ teaspoon paprika

4 cloves garlic, roughly chopped

6–7 cups vegetable stock (or chicken stock)

1 teaspoon kosher salt, plus more to taste

½ teaspoon ground black pepper

3 tablespoons lemon juice

½ cup Italian parsley, chopped, plus more for garnish

Optional Chickpea Croutons:

1 (15-ounce) can chickpeas, rinsed

1 tablespoon olive oil

½ teaspoon ground cumin

½ teaspoon kosher salt

¼ teaspoon ground black pepper

1 tablespoon everything but the bagel seasoning (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with aluminum foil. Using a fork or sharp knife, poke 7–8 holes in each eggplant to allow steam to escape during roasting. Arrange the eggplants in a single layer on the prepared baking sheet.
  2. Roast the eggplants for 50–60 minutes, turning them every 20 minutes to ensure even cooking. The eggplants are ready when they become very soft and their skins begin to burst. Remove them from the oven and let them cool for approximately 15 minutes. Once cool enough to handle, carefully peel away the skins and set the roasted flesh aside.
  3. Prepare the optional chickpea croutons while the eggplants cool. Keep the oven at 400°F (200°C). Pat the rinsed chickpeas dry, then toss them with 1 tablespoon olive oil, ½ teaspoon cumin, ½ teaspoon kosher salt, and ¼ teaspoon black pepper. Spread them in a single layer on a baking sheet and roast for approximately 15 minutes. Remove from the oven, allow them to cool slightly, and toss with everything but the bagel seasoning if desired.
  4. Heat 2 tablespoons olive oil in a large saucepan or Dutch oven over medium-high heat. Add the sliced onion, ½ teaspoon ground cumin, and ½ teaspoon paprika. Cook for 5–6 minutes, stirring frequently, until the onion becomes soft and translucent and the spices are fragrant.
  5. Add the roughly chopped garlic to the saucepan and cook for another 30 seconds, stirring continuously to prevent burning.
  6. Add the roasted eggplant flesh to the saucepan along with 6–7 cups vegetable stock, 1 teaspoon kosher salt, and ½ teaspoon black pepper. Stir to combine. Cover the pot and bring the mixture to a boil, then reduce the heat to medium-low and simmer gently for 10–15 minutes to allow the flavors to develop.
  7. Remove the saucepan from the heat. Using an immersion blender, carefully puree the soup until smooth and creamy with no large pieces remaining. Alternatively, blend the soup in batches using a countertop blender, following the manufacturer’s safety instructions for hot liquids.
  8. Stir in the fresh lemon juice and chopped Italian parsley. Taste the soup and adjust the salt, black pepper, or lemon juice as needed. If the soup is too thick, add a little additional vegetable stock until the desired consistency is reached.
  9. Ladle the warm roasted eggplant soup into individual serving bowls. Garnish with additional chopped fresh parsley and top with the optional roasted chickpea croutons for extra crunch. Serve immediately with crusty bread, toasted pita, or a fresh green salad.

Notes

Stock variations: Use vegetable stock to keep the soup vegetarian and vegan. Chicken stock can be substituted for a richer, more savory flavor.

Adjusting consistency: Use 6 cups of stock for a thicker, creamier soup or 7 cups for a lighter, thinner consistency. Add more stock gradually after blending if necessary.

Roasting tip: Roast the eggplants with their skins on to develop a deep, slightly smoky flavor. The skins should begin to burst and the flesh should feel very soft when fully cooked.

Peeling eggplants: Allow the roasted eggplants to cool for approximately 15 minutes before removing the skins. The softened flesh should separate easily from the skin.

Extra-smooth texture: For an especially silky soup, pass the blended mixture through a medium-mesh strainer to remove any remaining pieces.

Blender alternatives: If an immersion blender is unavailable, use a countertop blender or food processor. Blend in small batches and take appropriate precautions when handling hot soup.

Chickpea croutons: The roasted chickpea topping is completely optional but adds extra texture, fiber, and plant-based protein. Pat the chickpeas dry before roasting to help them crisp up.

Seasoning substitutions: Everything but the bagel seasoning can be omitted from the chickpea croutons. The olive oil, cumin, salt, and black pepper provide plenty of flavor on their own.

Flavor adjustments: Add extra lemon juice for a brighter finish or a pinch of additional cumin or paprika for a stronger warm-spice flavor.

Dairy-free option: This soup is naturally dairy-free and achieves its creamy consistency from the blended roasted eggplant without needing milk or cream.

Make-ahead tip: Prepare the soup in advance and refrigerate it in an airtight container. Keep the roasted chickpea croutons separate until serving to preserve their texture.

Refrigerator storage: Allow the soup to cool before transferring it to an airtight container. Refrigerate promptly and consume within 3–4 days.

Freezing: Freeze the cooled soup in freezer-safe containers for up to 3 months. Leave a little space for expansion and thaw overnight in the refrigerator before reheating.

Reheating: Warm the soup in a saucepan over medium-low heat, stirring occasionally until thoroughly heated. Add a splash of vegetable stock if the soup has thickened during storage.

Serving suggestions: Pair the soup with crusty bread, toasted pita, a simple green salad, or roasted vegetables. Add the crispy chickpea croutons just before serving.

Nutrition information is estimated per serving based on 4 servings, 6–7 cups of vegetable stock, and the optional chickpea croutons. Actual nutritional values vary depending on stock brands, eggplant size, and toppings used.
