Description
These Pumpkin Spice Waffles have crisp edges, fluffy centers, and plenty of cozy fall flavor from real pumpkin puree and pumpkin pie spice. Ready in just 20 minutes, they make an easy seasonal breakfast or brunch.
Ingredients
1 1/2 cups flour
3 teaspoons baking powder
1/2 teaspoon baking soda
3 teaspoons pumpkin pie spice
1/2 teaspoon fine sea salt
1 2/3 cups whole milk
1 cup pumpkin puree, NOT pumpkin pie filling
2 eggs
1/4 cup light brown sugar, firmly packed
3 tablespoons butter, melted
Candied walnuts, for garnish
Whipped cream, for garnish
Instructions
- Whisk or sift together the flour, baking powder, baking soda, pumpkin pie spice, and fine sea salt in a medium mixing bowl. Set aside.
- In a separate large bowl, whisk together the whole milk, pumpkin puree, eggs, light brown sugar, and melted butter until well combined.
- Gradually add the dry ingredients to the wet ingredients, gently folding just until combined. Avoid overmixing.
- Preheat the waffle iron according to the manufacturer’s directions and generously coat it with cooking spray.
- Add the appropriate amount of batter for your waffle maker, adjusting the quantity according to its size and capacity.
- Cook according to the waffle maker’s directions until the waffles are crisp on the outside and cooked through in the center.
- Serve immediately with syrup, candied walnuts, and whipped cream as desired.
Notes
Use plain pumpkin puree rather than pumpkin pie filling.
Add chopped pecans, walnuts, or mini chocolate chips to the batter for variation.
Avoid overmixing the batter to help keep the waffles light and fluffy.
For crisp waffles, fully preheat the waffle iron and avoid stacking freshly cooked waffles.
Store cooled leftovers in an airtight container in the refrigerator for up to 1 week.
Freeze completely cooled waffles for longer storage and reheat in a toaster, toaster oven, or conventional oven until hot and crisp.
