Description

These Pumpkin Spice Rice Krispie Treats give the classic crispy, chewy cereal bar a cozy autumn twist with pumpkin puree, pumpkin pie spice, and vanilla. A sweet white chocolate drizzle makes them an easy and festive treat for fall parties, Halloween, or Thanksgiving.


Ingredients

4 tablespoons butter, divided

1/4 cup pumpkin puree

1 (10 ounce) bag mini marshmallows

1 teaspoon pumpkin pie spice blend

1/2 teaspoon vanilla extract

6 cups Rice Krispies cereal

2 ounces white melting chocolate or vanilla candy melts


Instructions

  1. Melt the butter in a large pot over medium heat, then reduce the heat to low.
  2. Remove 1 tablespoon of the melted butter and use it to grease the bottom and sides of an 11×7-inch pan.
  3. Add the pumpkin puree to the remaining melted butter and cook over low heat for about 1 minute, stirring constantly until heated through.
  4. Add the mini marshmallows and cook over low heat, stirring constantly, until completely melted and smooth.
  5. Remove the pot from the heat and stir in the pumpkin pie spice and vanilla extract.
  6. Place the Rice Krispies cereal in a large mixing bowl. Add the pumpkin-marshmallow mixture and gently stir until the cereal is evenly coated.
  7. Transfer the mixture to the prepared pan and gently spread it into an even layer using a buttered spatula. Avoid pressing too firmly.
  8. Refrigerate for 1 hour or until completely set.
  9. Remove the treats from the pan, transfer to a cutting board, and cut into 12 squares with a sharp knife.
  10. Melt the white chocolate or vanilla candy melts according to the package directions and drizzle over the treats.
  11. Allow the drizzle to set for about 30 minutes before serving.

Notes

Do not cook the marshmallows over high heat or firmly compress the cereal mixture, as this can produce hard treats.

Vanilla candy melts can be substituted for the white melting chocolate.

Decorate with seasonal sprinkles or an extra pinch of pumpkin pie spice before the drizzle sets.

Store in an airtight container at room temperature for 2 to 3 days, separating layers with parchment or wax paper.

For party-sized portions, cut the set mixture into smaller bite-sized squares.
