Ingredients
1 cup gluten-free rolled oats
1/4 cup flax meal

1/4 cup almond butter

3 tablespoons maple syrup

2 tablespoons mini chocolate chips, dairy-free if needed
Instructions
- Add the almond butter, pumpkin purée, maple syrup, and vanilla extract to a medium bowl and stir until well combined.
- Add the rolled oats, flax meal, pumpkin pie spice, and mini chocolate chips. Stir until evenly incorporated.
- If the mixture is too sticky to handle, refrigerate it for about 15 minutes to firm up.
- Roll the mixture into approximately 1-inch balls.
- Arrange the energy bites in a single layer in an airtight container.
- Refrigerate until ready to enjoy, or freeze for longer storage.
