Description
This Grilled Summer Squash Sandwich layers tender, smoky zucchini and yellow squash with creamy vegetable cheese spread, fresh basil, and balsamic vinegar on crisp toasted sourdough. It is a quick and satisfying summer lunch or light dinner ready in just 15 minutes.
Ingredients
1 small zucchini, sliced
1 small yellow squash, sliced
Olive oil, for brushing
4 slices sourdough bread
3 wedges Laughing Cow Smooth Sensations Garden Vegetable Spread or vegetable cream cheese
1 small bunch fresh basil, thinly sliced
Balsamic vinegar, for brushing
Salt, to taste
Pepper, to taste
Instructions
- Preheat a grill pan over medium-high heat. An outdoor gas grill or indoor electric grill can also be used.
- Brush the sliced zucchini and yellow squash on both sides with olive oil.
- Place the squash on the hot grill and cook until grill marks appear and the vegetables begin to soften.
- Flip the squash and cook the second side until tender and evenly grilled.
- Meanwhile, toast the sourdough bread until crisp to your liking.
- Spread the vegetable cheese spread evenly over the toasted bread slices.
- Layer fresh basil over the cheese spread, then arrange the grilled zucchini and yellow squash on top.
- Brush the grilled squash lightly with balsamic vinegar and season with salt and pepper.
- Serve immediately while the bread is crisp and the vegetables are still warm.
Notes
Ciabatta, focaccia, or sturdy country-style bread can be used instead of sourdough.
Vegetable cream cheese or plain cream cheese mixed with fresh herbs can replace the Laughing Cow spread.
Grilled bell peppers, eggplant, onions, or fresh tomato can be added for extra vegetables.
Goat cheese, feta, or mozzarella can be added for a stronger cheese flavor.
For a heartier version, add grilled chicken or another cooked protein.
Store grilled squash separately in an airtight container in the refrigerator for 3 to 4 days and assemble sandwiches just before serving.
To avoid soggy bread, toast it well, use balsamic vinegar sparingly, and assemble immediately before eating.
