Description

These Lemon Brownies are soft, moist, and bursting with bright citrus flavor balanced by rich white chocolate. Finished with a sweet lemon glaze, they are a refreshing and indulgent dessert perfect for any occasion.


Ingredients

1/2 cup unsalted butter

1 (4 oz.) white chocolate bar

3/4 cup granulated sugar

2 tablespoons lemon zest

2 large eggs, room temperature

1 large egg yolk, room temperature

1 teaspoon lemon extract

1 teaspoon vanilla extract

1 cup + 2 tablespoons all-purpose flour

1/2 teaspoon salt

1/8 teaspoon baking powder

2 tablespoons fresh lemon juice

1 cup powdered sugar

2 tablespoons fresh lemon juice (for glaze)


Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. Melt the butter and white chocolate together in a microwave-safe bowl, stirring frequently until smooth. Allow to cool slightly.
  3. In a large bowl, rub the granulated sugar and lemon zest together until fragrant.
  4. Whisk in the eggs, egg yolk, lemon extract, and vanilla extract for about 1 minute.
  5. Fold in the melted white chocolate and butter mixture until combined.
  6. Add the flour, salt, and baking powder. Fold a few times, then add the fresh lemon juice and mix just until incorporated.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 25 to 30 minutes, until the edges are lightly golden and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the brownies to cool completely.
  10. Whisk together the powdered sugar and lemon juice for the glaze until smooth.
  11. Spread the glaze over the cooled brownies and let it set for 15 to 30 minutes before slicing into 9 squares.

Use fresh lemon juice and zest for the brightest citrus flavor.
