Description

Creamy Crack Chicken Gnocchi is a comforting and flavorful dish combining tender chicken, pillowy gnocchi, and a rich creamy sauce. Topped with crispy grilled chicken strips and ranch seasoning, it’s an easy-to-make meal that’s ready in under 30 minutes, perfect for busy weeknights.


Ingredients

For the Dish:

1 lb chicken breast (diced)

1 tablespoon olive oil

1 onion (chopped)

2 cloves garlic (minced)

1 cup chicken broth

1 cup heavy cream

1 can cream of chicken soup

1 teaspoon ranch seasoning mix

1 lb potato gnocchi

1 cup shredded cheddar cheese

1/2 cup crispy grilled chicken strips (cut into small pieces)

Fresh parsley (chopped, for garnish)

Salt and pepper to taste


Instructions

  • Cook the Chicken:
    In a skillet, heat olive oil and cook diced chicken until no longer pink. Remove from the skillet and set aside.

  • Sauté the Veggies:
    In the same skillet, cook chopped onion and minced garlic until soft, about 2-3 minutes.

  • Make the Sauce:
    Add chicken broth, heavy cream, cream of chicken soup, and ranch seasoning. Stir until the sauce is smooth.

  • Add Gnocchi:
    Stir in gnocchi and cooked chicken. Simmer for 5-7 minutes until the gnocchi is tender and cooked through.

  • Top and Bake:
    Transfer the mixture to a baking dish, sprinkle with shredded cheddar cheese, and bake at 375°F (190°C) for 15-20 minutes, or until the cheese is bubbly and golden.

  • Garnish and Serve:
    Top with crispy grilled chicken strips and freshly chopped parsley before serving.
