Description

This citrus feta salad is a fresh and vibrant dish featuring juicy orange segments, creamy feta cheese, crunchy pistachios, and fragrant mint tossed with a light honey-citrus dressing. Perfect as a refreshing side dish or a light Mediterranean-inspired meal.

Ingredients

2 large oranges, peeled and segmented

1 cup baby spinach or arugula

1/2 cup crumbled feta cheese

1/4 cup shelled pistachios, roughly chopped

2 tbsp fresh mint leaves, thinly sliced

1 tbsp extra-virgin olive oil

1 tsp honey

1/2 tsp Dijon mustard

1 tsp lemon juice

Salt and freshly cracked black pepper, to taste

Instructions

  1. In a small bowl, whisk together the olive oil, honey, Dijon mustard, lemon juice, salt, and black pepper until smooth and combined.
  2. Peel and segment the oranges carefully, removing any seeds and excess white pith.
  3. Arrange the baby spinach or arugula on a serving plate or shallow salad bowl.
  4. Top the greens with the orange segments, crumbled feta cheese, and chopped pistachios.
  5. Drizzle the honey-citrus dressing evenly over the salad.
  6. Garnish with freshly sliced mint leaves and serve immediately.

Notes

Use blood oranges, grapefruit, or mandarins for different citrus flavors and colors.

Add grilled chicken, shrimp, salmon, quinoa, or chickpeas for extra protein.

Toasted almonds, walnuts, or pecans can replace pistachios.

For a dairy-free version, omit the feta or use a plant-based cheese alternative.

Store the dressing separately if preparing ahead to keep the greens crisp.

Pat orange segments dry before assembling to avoid excess moisture.

Serve immediately for the freshest texture and flavor.
