Description
This Chicken Cordon Bleu Meatloaf combines juicy ground chicken with layers of smoked turkey and melty Swiss cheese, finished with a creamy Dijon topping. It’s a comforting, family-friendly dinner that’s easy enough for weeknights yet impressive enough for guests.
Ingredients
2 lbs ground chicken
1 cup breadcrumbs (plain or seasoned)
2 large eggs
1/2 cup milk
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 teaspoon dried parsley
6 slices Swiss cheese (or provolone, mozzarella, etc.)
6 slices smoked turkey
1/2 cup shredded Swiss cheese
2 tablespoons Dijon mustard
2 tablespoons mayonnaise
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease or line a loaf pan with parchment paper.
- In a large bowl, combine the ground chicken, breadcrumbs, eggs, milk, onion, garlic, Dijon mustard, salt, black pepper, paprika, and dried parsley. Mix until just combined.
- Spread half of the chicken mixture evenly into the prepared loaf pan.
- Layer the smoked turkey evenly over the chicken mixture, then top with the Swiss cheese slices.
- Spread the remaining chicken mixture over the filling, gently pressing the edges to seal.
- Bake for 45 to 50 minutes, or until the internal temperature reaches 165°F (74°C).
- During the last 5 minutes of baking, mix the Dijon mustard and mayonnaise, spread over the top of the meatloaf, sprinkle with the shredded Swiss cheese, and return to the oven until the cheese is melted and bubbly.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Ground turkey can be substituted for ground chicken.
Provolone, mozzarella, or mild cheddar work well in place of Swiss cheese.
Add chopped spinach between the turkey and cheese layers for extra vegetables.
Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
Serve with mashed potatoes, roasted vegetables, green beans, or a fresh salad.
