Ingredients

1 tablespoon olive oil

1 small yellow onion, diced

2 cloves garlic, minced

1 pound ground beef

1 teaspoon salt

½ teaspoon black pepper

1 ½ cups red enchilada sauce

20 ounces cheese tortellini (fresh or refrigerated)

½ cup sour cream

1 cup shredded cheddar cheese

¼ cup fresh cilantro, chopped (for garnish


Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3–4 minutes until softened.

  • Add minced garlic and cook for 30 seconds, or until fragrant.

  • Add ground beef, season with salt and pepper, and cook until browned, breaking it apart as it cooks.

  • Drain any excess fat from the beef, then pour in the enchilada sauce. Stir to combine and bring to a simmer.

  • Stir in the cheese tortellini, cover the skillet, and cook for 4–6 minutes or until the tortellini is tender and cooked through.

  • Remove the skillet from heat. Stir in sour cream and shredded cheddar cheese until everything is melted and creamy.

  • Serve hot, garnished with fresh cilantro and an extra spoonful of sour cream if desired.


Notes

Spicy Version: Add a pinch of cayenne pepper or chopped jalapeños for some heat.
