Ingredients
1 tablespoon olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1 pound ground beef
1 teaspoon salt
½ teaspoon black pepper
1 ½ cups red enchilada sauce
20 ounces cheese tortellini (fresh or refrigerated)
½ cup sour cream
1 cup shredded cheddar cheese
¼ cup fresh cilantro, chopped (for garnish
Instructions

Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3–4 minutes until softened.
