Ingredients
1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup butterscotch chips
1 cup semi-sweet chocolate chips
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Mix it Together: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Fold in the Chips: Gently fold in the butterscotch chips and chocolate chips until evenly distributed throughout the dough.
- Scoop the Dough: Using a cookie scoop or spoon, drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie to allow for spreading.
- Bake: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
- Cool: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.
Notes
If using salted butter, reduce the added salt to ¼ teaspoon to avoid overly salty cookies.
You can freeze the cookie dough by scooping it into balls and freezing them. Once frozen, store the dough balls in a freezer-safe bag for up to 3 months. Bake as usual, adding an extra minute or two to the baking time.
Feel free to swap out the butterscotch chips with other chips like toffee, white chocolate, or peanut butter for a different flavor.
To make the cookies chewier, consider adding an extra egg yolk to the dough.
