Description

Baked Honey Mustard Chicken is a simple yet delicious recipe where tender chicken breasts are coated in a sweet and tangy honey mustard sauce, then baked to perfection. With a perfect balance of mustard’s tang and honey’s sweetness, this dish is an ideal choice for busy weeknights. The chicken remains juicy and flavorful, making it a satisfying meal for the whole family.

Ingredients

4 boneless, skinless chicken breasts

1 teaspoon chicken seasoning blend (or your preferred spice mix)

2 tablespoons olive oil

¼ cup honey

1 tablespoon Dijon mustard

1 tablespoon yellow mustard

1 tablespoon wholegrain mustard

½ teaspoon white vinegar

⅛ teaspoon paprika

4 sprigs fresh rosemary (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.

  2. Heat 1½ tablespoons of olive oil in a skillet over medium-high heat. Season the chicken breasts with the chicken seasoning blend, then brown the chicken in the skillet for about 2 minutes on each side.

  3. In a small bowl, mix honey, Dijon mustard, yellow mustard, wholegrain mustard, white vinegar, and paprika.

  4. Once the chicken is browned, transfer it to the prepared baking dish. Pour the honey mustard sauce over the chicken, ensuring it’s coated evenly.

  5. If desired, place rosemary sprigs between the chicken breasts for added aroma and flavor.

  6. Cover the baking dish with foil and bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

  7. Let the chicken rest for 5 minutes before serving.

Notes

Add Spice: For an extra kick, add a dash of hot sauce or cayenne pepper to the honey mustard sauce.

Chicken Thighs: Substitute chicken breasts with boneless thighs for a juicier result.

Honey Soy Option: Swap the mustard for soy sauce for a honey soy chicken twist.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet or microwave until warmed through.
