Ingredients
4 boneless, skinless chicken breasts
1 teaspoon chicken seasoning blend (or your preferred spice mix)
2 tablespoons olive oil
¼ cup honey
1 tablespoon Dijon mustard
1 tablespoon yellow mustard
1 tablespoon wholegrain mustard
½ teaspoon white vinegar
⅛ teaspoon paprika
4 sprigs fresh rosemary (optional)
Instructions
-
Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
-
Heat 1½ tablespoons of olive oil in a skillet over medium-high heat. Season the chicken breasts with the chicken seasoning blend, then brown the chicken in the skillet for about 2 minutes on each side.
-
In a small bowl, mix honey, Dijon mustard, yellow mustard, wholegrain mustard, white vinegar, and paprika.
-
Once the chicken is browned, transfer it to the prepared baking dish. Pour the honey mustard sauce over the chicken, ensuring it’s coated evenly.
-
If desired, place rosemary sprigs between the chicken breasts for added aroma and flavor.
-
Cover the baking dish with foil and bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
-
Let the chicken rest for 5 minutes before serving.
Notes
Add Spice: For an extra kick, add a dash of hot sauce or cayenne pepper to the honey mustard sauce.
Chicken Thighs: Substitute chicken breasts with boneless thighs for a juicier result.
Honey Soy Option: Swap the mustard for soy sauce for a honey soy chicken twist.
Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet or microwave until warmed through.
