Description

Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

½ teaspoon cumin

½ teaspoon garlic powder

¼ teaspoon salt

4 cups romaine lettuce, chopped

1 cup canned black beans, drained and rinsed

1 cup corn kernels (fresh or canned)

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

1 avocado, diced

¼ cup fresh cilantro, chopped

Juice of 1 lime


Instructions

  • Preheat grill or grill pan to medium-high heat. Brush chicken breasts with olive oil and season with chili powder, cumin, garlic powder, and salt.

  • Grill chicken for 6-7 minutes per side, or until cooked through and juices run clear. Remove from heat, let rest for 5 minutes, then slice thinly.
