A comforting make-ahead breakfast casserole made with buttery croissants, creamy custard, sweet peaches, and warm spices, perfect for relaxed mornings and special occasions.
Ingredients
6 croissants
3 large eggs
1 cup milk
2 teaspoons vanilla extract
1/8 teaspoon salt
1/8 teaspoon nutmeg
1 can unsweetened sliced peaches, drained (about 700 ml)
1/4 cup brown sugar
1/4 teaspoon cinnamon
Maple syrup, to taste
Instructions
- Grease a 9×13-inch baking dish.
- Break the croissants into bite-sized pieces and spread them evenly in the baking dish.
- In a medium bowl, whisk together the eggs, milk, vanilla, salt, and nutmeg.
- Pour the egg mixture evenly over the croissants.
- Arrange the drained peach slices over the top.
- Sprinkle evenly with brown sugar and cinnamon.
- Cover the dish with foil and refrigerate overnight.
- Preheat the oven to 350°F (175°C).
- Bake the casserole covered for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, until set and lightly golden.
- Serve warm with maple syrup.
Notes
Overnight chilling gives the best custardy texture.
Make sure peaches are well drained to avoid sogginess.
Croissants can be substituted with brioche or challah.
Chopped nuts can be added for extra crunch.
