Description

Watermelon Kiwi Popsicles are a refreshing, healthy treat perfect for hot summer days. With just a few simple ingredients—watermelon, kiwi, lime juice, and optional sweetener—these popsicles offer a fruity explosion of flavor. Easy to make and naturally sweet, they are the perfect way to cool down, offering a colorful and nutritious snack for your next summer gathering or a fun treat to beat the heat!


Ingredients

4 cups seedless watermelon, chopped

45 ripe kiwis, peeled

12 tablespoons agave or honey (optional)

1 tablespoon fresh lime juice


Instructions

  • Prepare the Watermelon Base: Blend the watermelon chunks and lime juice until smooth. If you’d like a sweeter popsicle, add agave or honey and blend again.

  • Fill the Molds: Pour the smooth watermelon mixture into popsicle molds, filling them about three-quarters full to leave room for the kiwi slices.

  • Freeze the Watermelon Base: Place the molds in the freezer for about 90 minutes, or until the watermelon layer is slushy and firm enough to hold the kiwi slices.

  • Add Kiwi: Slice the kiwis while the watermelon base is freezing. Once the watermelon layer is firm, press the kiwi slices into each mold on top of the frozen watermelon.

  • Insert Sticks and Freeze: Insert the sticks into the molds and return them to the freezer for at least 4 hours, or overnight for best results.


Notes

For a vegan version, use agave syrup instead of honey.

If you don’t have popsicle molds, you can use small cups or ice cube trays.

To make these popsicles more indulgent, dip them in melted chocolate before serving.

You can substitute the kiwi with other fruits like strawberries, mangoes, or pineapple for a different twist.
