A refreshing summer salad made with juicy watermelon, tart blackberries, creamy vegan feta, and fresh basil tossed in a light citrus dressing for a vibrant and elegant dish.
Ingredients
6 cups (about 3.5 lbs or 1590 g) cubed watermelon
6 ounces (170 g) fresh blackberries
¾ cup (110 g) diced vegan feta
1 ½ tablespoons chiffonade-cut fresh basil
2 teaspoons agave nectar
2 teaspoons apple cider vinegar
2 teaspoons fresh lime juice
½ teaspoon lime zest
Pinch of salt
Instructions
- Place cubed watermelon, blackberries, and diced vegan feta in a large mixing bowl.
- In a small bowl, whisk together basil, agave nectar, apple cider vinegar, lime juice, lime zest, and a pinch of salt until well combined.
- Pour the dressing over the fruit mixture and gently toss until evenly coated.
- Serve immediately for best texture and flavor. If preparing ahead, add salt just before serving.
Notes
For best results, use ripe, seedless watermelon.
Add salt just before serving to prevent excess moisture.
Store leftovers in an airtight container in the refrigerator for up to 1 day.
Honey or maple syrup can be substituted for agave nectar.
Traditional feta may be used if not keeping the salad vegan.
Not suitable for freezing or reheating.
