Description

Vegan Veggie Rainbow Wraps are vibrant and healthy wraps filled with a variety of fresh veggies and creamy herb-infused vegan cream cheese, all wrapped in spinach tortillas. These colorful wraps are packed with fiber, vitamins, and antioxidants, making them an easy, nutritious meal or snack that’s perfect for any occasion.


Ingredients

6 spinach tortillas

8 ounces vegan cream cheese

1 bunch fresh herbs (chives, dill, basil, rosemary)

1/4 teaspoon sea salt

3 carrots

3 stalks celery

1 whole red bell pepper

1 whole yellow bell pepper

1/2 head red cabbage

  • 1 whole cucumber

Instructions

  1. Prepare the Vegetables:
    Wash, towel dry, peel, and slice the veggies (carrots, celery, bell peppers, cabbage, cucumber) into thin strips. Set them aside.
  2. Make the Cream Cheese Mix:
    Mince the fresh herbs (chives, dill, basil, and rosemary) and mix them with the vegan cream cheese. Add 1/4 teaspoon of sea salt and stir until well combined. Set this aside.
  3. Assemble the Wraps:
    Spread a layer of the herb-infused vegan cream cheese onto each spinach tortilla. Place a variety of veggie strips on top of the cream cheese in a colorful arrangement. Roll the tortilla tightly, sealing it with a little extra cream cheese at the end to hold the wrap together.
  4. Repeat:
    Continue assembling the wraps with the remaining tortillas and fillings.
  5. Serve:
    Arrange the wraps on a platter or cutting board. Cut them into smaller pieces if desired for easy serving.

Notes

You can adjust the veggies and herbs based on your preferences or what you have available.
