Description

Vegan Honeydew Ice Cream is a refreshing, dairy-free treat made with honeydew melon, plant milk, and raw cane sugar. It’s the perfect healthy alternative to store-bought ice cream, offering a sweet, fruity flavor without any artificial additives.


Ingredients

4 cups honeydew chunks

1/3 cup raw cane sugar

1/2 cup unsweetened plant milk (soy milk, almond milk, coconut milk, or oat milk)


Instructions

  1. Add the honeydew chunks, raw cane sugar, and plant milk to a blender. Blend until smooth and adjust the sweetness as needed.
  2. Pour the mixture into an ice cream or sorbet maker and allow it to thicken. Alternatively, you can enjoy it as is for a spoonable consistency.
  3. To make Melona bar shapes, pour the ice cream mixture into a small, square mould. Flatten it with a spatula.
  4. Cut holes into the mould, insert popsicle sticks, and freeze for 2-3 hours until solid.
  5. After freezing, remove the bars from the mould and slice them into popsicle shapes. Shave the edges to form a rectangular shape, similar to the original Melona bars.
  6. Serve immediately or store in an airtight container in the freezer for up to one month.

Notes

Experiment with other fruits like cantaloupe or watermelon for a mixed fruit flavor.

Swap raw cane sugar for maple syrup, agave, or your preferred sweetener.

Add chopped nuts, shredded coconut, or small pieces of fresh fruit for extra texture.

For extra creaminess, add a tablespoon of coconut cream or use full-fat coconut milk.
