Description

Vegan Coffin Brownies are rich, fudgy Halloween treats shaped like coffins, topped with chocolate fudge, crushed Oreos, and white chocolate skeletons. Completely plant-based and perfect for spooky celebrations.


Ingredients

4 tablespoons ground flaxseed

8 tablespoons water

140g dairy-free butter (room temperature)

160g caster sugar

160g light brown sugar

1 tablespoon Natures Charm Condensed Oat Milk

100g cocoa powder

1 teaspoon baking powder

200g self-raising flour

Natures Charm Chocolate fudge sauce (for topping)

1 pack of regular Oreos (154g)

150g dairy-free white chocolate


Instructions

  1. Preheat the oven to 180°C fan and line a deep baking tray with grease-proof paper.
  2. Make the flax eggs by mixing ground flaxseed and water in a bowl. Stir and let sit for 10 minutes to thicken.
  3. In a large bowl, whisk together the dairy-free butter, caster sugar, brown sugar, and thickened flax eggs until light in color.
  4. Add condensed oat milk, cocoa powder, baking powder, and self-raising flour. Mix until a thick brownie batter forms.
  5. Spread the batter evenly in the prepared baking tray and smooth the top.
  6. Bake for 25–30 minutes or until a skewer inserted comes out clean. Monitor edges to prevent burning.
  7. Let the brownie cool slightly, then cut coffin shapes using a cookie cutter. Set aside on greaseproof paper.
  8. Spread ½ teaspoon of chocolate fudge sauce on each brownie.
  9. Blitz Oreos into crumbs and dip the tops of the brownies into the crumbs to stick to the fudge. Let set on a tray.
  10. Melt white chocolate using a bain-marie or microwave in 10-second intervals until smooth.
  11. Transfer melted chocolate to a piping bag, snip the tip, and pipe skeleton bodies on top of each brownie.
  12. Pipe faces on greaseproof paper, freeze for 5 minutes, then place on the brownies. Use extra melted chocolate to attach if needed.

Notes

Use dark or vegan milk chocolate instead of white chocolate for a different skeleton look.

Add a layer of vegan caramel under the Oreo topping for added richness.

Swap Oreos with crushed vegan cookies or nuts for variation.

Try other Halloween shapes with cookie cutters like pumpkins or ghosts.

Store in the fridge and bring to room temperature before serving for best texture.

Cut brownies while slightly warm to avoid cracking.

These brownies freeze well for up to 1 month.
