Description

Vegan Chocolate Peanut Butter Energy Balls are a delicious and nutritious no-bake snack packed with Medjool dates, coconut flour, peanut butter, and cocoa powder. They provide a satisfying combination of natural sweetness, healthy fats, and plant-based protein.


Ingredients

1 cup Medjool dates (about 12 dates)

⅔ cup coconut flour

½ cup unsweetened cocoa powder

½ cup peanut butter

3 tbsp coconut oil

1 tsp vanilla extract

A pinch of salt

⅓ cup cocoa powder (for rolling)


Instructions

  1. Process the Ingredients: Add all the ingredients (Medjool dates, coconut flour, cocoa powder, peanut butter, coconut oil, vanilla extract, and a pinch of salt) into a food processor. Pulse until the mixture becomes crumbly but holds together when lightly squeezed. If the mixture seems too dry, add up to 3 tablespoons of water, one tablespoon at a time, until the desired consistency is reached.
  2. Chill the Mixture: Refrigerate the mixture for 15 minutes to help it set and firm up, making it easier to shape.
  3. Form the Balls: Once chilled, use a cookie scoop or your hands to form the mixture into small balls.
  4. Coat with Cocoa Powder: Roll each ball in the ⅓ cup of cocoa powder until it is evenly coated.
  5. Store: Store the energy balls in an airtight container in the fridge for up to 2 weeks. You can also freeze them for up to 3 months for longer storage.

Notes

Feel free to add extra mix-ins like chopped nuts, chia seeds, or dried fruit for added texture and flavor.

If you prefer a different nut butter, you can swap peanut butter for almond butter, cashew butter, or sunflower seed butter.

If you like your energy balls sweeter, you can add a drizzle of maple syrup or agave syrup to the mixture.
