Description

A hearty and indulgent breakfast bowl layered with crispy tater tots, fluffy scrambled eggs, savory sausage, melted cheese, and fresh toppings. Perfect for weekend brunch or a comforting breakfast-for-dinner.


Ingredients

1 lb frozen tater tots

4 large eggs

1/2 cup cooked beef sausage, crumbled

1/2 cup shredded cheddar cheese

1/4 cup green onions, chopped

1/4 cup diced bell peppers (optional)

Salt, to taste

Black pepper, to taste

1 tbsp olive oil

Sour cream or salsa, optional for serving


Instructions

  1. Preheat the oven according to the tater tot package instructions, usually to 425°F (220°C).
  2. Spread frozen tater tots in a single layer on a baking sheet.
  3. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  4. While the tots cook, heat olive oil in a skillet over medium heat.
  5. Whisk the eggs with salt and pepper, then pour into the skillet.
  6. Scramble the eggs until fully cooked but still soft.
  7. To assemble, layer tater tots with scrambled eggs, sausage, cheddar cheese, bell peppers, and green onions.
  8. Return to the oven briefly if needed to melt the cheese.
  9. Top with sour cream or salsa and serve warm.

Notes

Air fryer tater tots are extra crispy if preferred.

Swap cheddar with pepper jack or mozzarella for variation.
