Description

Texas Cowboy Stew is a hearty, flavorful one-pot meal combining ground beef, smoked sausage, beans, vegetables, and a rich beef broth, topped with optional melted cheddar cheese for a comforting and filling dish.


Ingredients

1 pound ground beef

1 onion, chopped

2 cloves garlic, minced

1 package (14 ounces) skinless smoked sausage, sliced

3 medium potatoes, peeled and diced

1 can (15 ounces) kidney beans, drained and rinsed

1 can (15 ounces) black beans, drained and rinsed

1 can (15 ounces) corn kernels, drained

1 can (15 ounces) diced tomatoes

2 ½ cups beef broth

2 teaspoons chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon pepper

1 cup shredded cheddar cheese, optional


Instructions

  1. In a large pot or Dutch oven, cook the ground beef, onion, and garlic over medium heat until the beef is browned. Drain excess fat.
  2. Add the sliced smoked sausage and cook for a few minutes until heated through.
  3. Stir in diced potatoes, kidney beans, black beans, corn, and diced tomatoes (with juice). Combine well.
  4. Pour in beef broth and stir in chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine.
  5. Bring the mixture to a simmer. Reduce the heat to low, cover, and let simmer for 20–25 minutes, or until the potatoes are tender.
  6. Optional: Stir in shredded cheddar cheese until melted and fully combined.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

Swap out the beans for your favorite variety (e.g., pinto beans or great northern beans).

For a spicy version, add diced jalapeños or a dash of hot sauce.

Try using Monterey Jack or mozzarella cheese for a different flavor.

For added veggies, throw in some sautéed bell peppers, carrots, or zucchini.
