Description

A flavorful roasted tri-tip combining a sweet and savory teriyaki marinade with a smoky barbecue rub, resulting in a juicy, tender roast with a bold crust that’s perfect for both special occasions and hearty family meals.


Ingredients

1 (2–3 lbs) tri-tip roast, trimmed of excess fat

1 cup soy sauce (halal-certified)

1/4 cup honey or maple syrup

2 tablespoons brown sugar

2 tablespoons rice vinegar

1 tablespoon grated ginger

4 cloves garlic, minced

1 tablespoon sesame oil

1 teaspoon ground black pepper

2 tablespoons smoked paprika

2 tablespoons brown sugar (for rub)

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon ground black pepper (for rub)

1 teaspoon salt

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Fresh herbs for garnish (optional)


Instructions

  1. Whisk together soy sauce, honey or maple syrup, brown sugar, rice vinegar, ginger, garlic, sesame oil, and black pepper to make the teriyaki marinade.
  2. Place the tri-tip in a resealable bag or shallow dish, pour the marinade over it, and refrigerate for at least 2 hours or overnight for best flavor.
  3. In a small bowl, mix smoked paprika, brown sugar, garlic powder, onion powder, black pepper, salt, cumin, and chili powder to make the barbecue rub.
  4. Remove the tri-tip from the marinade, pat dry, drizzle with olive oil, and rub the seasoning evenly over the meat.
  5. Preheat oven to 400°F (200°C). Place the tri-tip on a roasting rack in a shallow pan.
  6. Roast for 25–30 minutes for medium-rare or 35–40 minutes for medium, until desired internal temperature is reached.
  7. Remove from oven and let rest for 10 minutes before slicing thinly against the grain.
  8. Garnish with fresh herbs if desired and serve.

Notes

Marinate no longer than 24 hours to avoid overly salty or soft meat.

Use low-sodium soy sauce for better salt control.

Letting the meat rest ensures juicier slices.

Slicing against the grain keeps the meat tender.
