Ingredients
4 cups frozen tater tots
1 pound breakfast sausage
3 tablespoons all-purpose flour
2 cups milk
Salt and black pepper to taste
Shredded cheddar cheese (optional)
Chopped green onions (optional)
Fried eggs (optional)
Instructions
- Preheat oven according to tater tot package instructions. Arrange tots on baking sheet and bake until golden and crispy.
- Heat skillet over medium heat. Cook breakfast sausage until browned and crumbled, stirring occasionally. Drain excess grease leaving about 2 tbsp.
- Sprinkle flour over sausage, stirring continuously for 2 minutes to cook out raw flour taste.
- Slowly whisk in milk to prevent lumps. Simmer until gravy thickens. Season with salt, pepper, and optional hot sauce.
- Divide crispy tots into bowls. Ladle sausage gravy over tots.
- Top with shredded cheddar, green onions, and fried eggs if desired. Serve immediately.
