Ingredients
2 large sweet potatoes, thinly sliced
2 cups kale, chopped
1 cup low-fat milk
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté garlic for about 1 minute until fragrant.
- Add chopped kale and cook for about 3 minutes, until wilted. Remove from heat.
- Arrange sweet potato slices evenly in a baking dish.
- Spread the sautéed kale mixture over the sweet potatoes.
- Pour the milk evenly over the layers, allowing it to seep between slices.
- Sprinkle Parmesan cheese, salt, and black pepper evenly on top.
- Bake for about 30 minutes, until sweet potatoes are tender and the top is lightly golden.
Notes
Slice sweet potatoes thinly for even cooking.
Sautéing kale removes bitterness.
Spinach can replace kale if desired.
