Ingredients

Golden Oreo Crust:

36 Golden Oreo cookies

1/2 cup unsalted melted butter

2 Tablespoons red sprinkles (optional)

2 Tablespoons white sprinkles (optional)

2 Tablespoons blue sprinkles (optional)

Blueberry Cheesecake Layer:

6 oz. sweetened berry blue gelatin

2/3 cup boiling water

1/2 cup cold Greek yogurt

1 1/2 cup fresh blueberries

8 oz. cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla

1 3/4 cups whipped cream (Cool Whip or homemade whipped cream)

Strawberry Jello Layer:

6 oz. strawberry Jello

1 1/4 cup boiling water + 3/4 cup iced water

4 cups sliced strawberries

Topping:

2 cups whipped cream (Cool Whip or homemade whipped cream)

Red, white, and blue sprinkles or star confetti for garnish


Instructions

  1. Make the Oreo Crust:
    • Place the Golden Oreo cookies (with filling) in a food processor and blend until finely crumbled.
    • Add the red, white, and blue sprinkles (optional) and stir.
    • Pour in the melted butter and mix until the crumbs are moistened.
    • Press the mixture into the bottom of a 9×13-inch dish.
    • Place the dish in the freezer to firm while preparing the next layer.
  2. Prepare the Blueberry Cheesecake Layer:
    • In a heatproof bowl, combine the berry blue Jello with 2/3 cup boiling water, stirring until fully dissolved. Set aside to cool.
    • In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth.
    • Add the whipped cream (Cool Whip or homemade) to the cream cheese mixture and mix to combine.
    • In a food processor, pulse together the Greek yogurt and fresh blueberries until smooth.
    • Pour the blueberry-yogurt mixture into the cooled Jello and whisk to combine. Then, add the cream cheese mixture and stir to combine.
    • Spread the mixture evenly over the chilled Oreo crust.
    • Place the dish back in the fridge or freezer to set for at least 30 minutes.
  3. Prepare the Strawberry Jello Layer:
    • In a heatproof bowl, combine the strawberry Jello with 1 1/4 cups boiling water, stirring until dissolved.
    • Add the iced water and stir well. Allow the mixture to sit at room temperature until fully cooled.
    • Place sliced strawberries over the chilled blueberry cheesecake layer.
    • Once the Jello mixture has cooled, pour it over the strawberries, ensuring an even layer.
    • Refrigerate until the Jello is firmly set, at least 4-6 hours or overnight.
  4. Top the Dessert:
    • Once the Jello is set, top the dessert with whipped cream (Cool Whip or homemade).
    • Garnish with red, white, and blue sprinkles or star confetti for a festive touch.
    • Slice and serve!

Notes

This dessert is best made a day or two ahead of time, as it needs time to chill and set properly.

Feel free to swap the strawberry and blueberry layers for other fruits like raspberries or peaches for a different twist.
