Description

Steak Bites with Chimichurri Sauce is a bold and flavorful dish that combines tender, seared steak with a fresh, garlicky chimichurri sauce. This quick and easy recipe is perfect for any occasion, from casual dinners to elegant parties. The crispy steak bites and zesty sauce make for a satisfying appetizer or main course in just 15 minutes.


Ingredients

Steak Bites:

2 lbs ribeye steak (or any steak of your choice), room temperature

1 tsp salt

1/2 tsp black ground pepper

1/2 tsp paprika

2 tsp brown sugar

1/8 tsp cayenne pepper

2 tsp oil (avocado or olive oil)

Chimichurri Sauce:

1/2 tsp salt

1/3 cup chopped parsley

2 cloves garlic, pressed

2 tsp lime or lemon juice

1/2 tsp chopped chili pepper (optional, for spiciness)

23 tbsp oil (avocado, light olive oil, etc.)


Instructions

  • Make the Chimichurri Sauce: Combine all chimichurri ingredients in a bowl and refrigerate until ready to use. For a smoother texture, blend in a food processor or blender.

  • Cook the Steak Bites: Trim the steak of excess fat, and cut it into 2-inch cubes. Season with salt, pepper, paprika, brown sugar, cayenne, and toss with oil.

  • Sear the Steak: Heat a cast iron skillet over medium-high heat until almost smoking. Sear the steak bites in batches for 2-3 minutes per side for medium, or 3-4 minutes for well-done. Avoid overcrowding the skillet to ensure proper searing.

  • Toss with Chimichurri: Transfer the steak bites to a warm bowl and toss with chimichurri sauce. Serve immediately.


Notes

Spicy Chimichurri: Add extra chili peppers or a dash of hot sauce for more heat.

Herb Variations: Add cilantro or oregano to the chimichurri for a new flavor twist.

Grilled Steak: For a smoky flavor, grill the steak bites instead of using a skillet.
