Description

Ingredients

2 packs puff pastry cups (keep frozen)

8 oz cream cheese, room temperature

2 cups torn baby spinach

8 oz marinated artichokes, chopped

1 cup shredded Swiss cheese

½ cup shredded Parmesan cheese (reserve 1 tbsp for topping)

1 tsp salt

½ tsp pepper

¼ tsp garlic powder

Instructions

  • Preheat & Prepare:
    Preheat your oven to 425°F (220°C). Spray a sheet pan with PAM Non-GMO Avocado Oil Cooking Spray. Place the puff pastry cups on the pan, spray the tops, and bake for 18 minutes or until golden brown. Remove from the oven and let them cool on a rack for 5 minutes. Once cooled, gently remove the tops of the puff pastry cups.

  • Make the Filling:
    In a mixing bowl, combine the cream cheese, spinach, artichokes, Swiss cheese, and Parmesan cheese. Stir well to combine. Add salt, pepper, and garlic powder. Microwave the mixture for 2 minutes to soften, then stir again.

  • Assemble the Cups:
    Spoon the spinach and artichoke mixture into the puff pastry cups. Top with the reserved Parmesan cheese.

Variations:

  • Different Cheeses: Swap Swiss for mozzarella or Gruyère to vary the flavor profile.

  • Make it Spicy: Add red pepper flakes or chopped jalapeño for a spicy kick.
