Description

Sparkling Cherry Gelatin Cups are a light, refreshing dessert made with cherry-flavored gelatin and sparkling water, topped with whipped cream, cherries, and mint for an elegant touch.

Ingredients

1 package (3 oz) cherry-flavored gelatin mix

1 cup boiling water

1 cup cold sparkling water

Fresh cherries (for garnish) or maraschino cherries

Whipped cream (for topping, optional)

Mint leaves (for garnish, optional)

Instructions

  1. Boil 1 cup of water. In a heatproof bowl, dissolve the cherry-flavored gelatin mix in the boiling water. Stir until fully dissolved.
  2. Allow the gelatin mixture to cool slightly, then pour in 1 cup of cold sparkling water. Stir gently to combine.
  3. Pour the gelatin mixture into cups or molds, filling them three-quarters full.
  4. Refrigerate for at least 4 hours, or until firm to the touch.
  5. Once set, garnish each cup with a cherry, whipped cream, and mint leaves, if desired.
  6. Serve chilled and enjoy the bubbly, refreshing texture!

Notes

You can use different fruity gelatin flavors like strawberry, raspberry, or lemon.

Diet or sugar-free gelatin can be used for a lighter version of this treat.

If you don’t have sparkling water, regular still water can be used, but it won’t have the bubbly effect.

For added fun, fresh fruit like chopped cherries, strawberries, or pineapple can be added to the gelatin.

To make the gelatin firmer, reduce the sparkling water or increase the gelatin slightly, but avoid using too much to prevent an overly firm texture.
