Ingredients
For the Cornbread Poppers:
- 1 cup yellow cornmeal
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup buttermilk
- ¼ cup melted unsalted butter
- 1 large egg
- ¼ cup honey
For the Honey Butter Glaze:
- ¼ cup unsalted butter, melted
- 2 tablespoons honey
Instructions
Prepare the Batter:

- In another bowl, mix buttermilk, melted butter, egg, and honey until well combined.

Bake the Poppers:
- Spoon batter into the mini muffin tin, filling each cavity about ¾ full.
- Bake for 10–12 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
Prepare the Honey Butter Glaze:
- While the poppers bake, whisk together melted butter and honey in a small bowl.
Glaze the Poppers:
- Let poppers cool for 5 minutes, then brush them generously with honey butter glaze while still warm.
