Description

Ingredients

For the Cornbread Poppers:

  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup buttermilk
  • ¼ cup melted unsalted butter
  • 1 large egg
  • ¼ cup honey

For the Honey Butter Glaze:

  • ¼ cup unsalted butter, melted
  • 2 tablespoons honey

Instructions

Prepare the Batter:

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, melted butter, egg, and honey until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined (do not overmix).

Bake the Poppers:

  1. Spoon batter into the mini muffin tin, filling each cavity about ¾ full.
  2. Bake for 10–12 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.

Prepare the Honey Butter Glaze:

  1. While the poppers bake, whisk together melted butter and honey in a small bowl.

Glaze the Poppers:

  1. Let poppers cool for 5 minutes, then brush them generously with honey butter glaze while still warm.
