Ingredients
1 cup peaches, peeled and diced
½ cup vegetable oil
½ cup sugar
2 eggs
½ cup sour cream
1 teaspoon vanilla extract
1 ½ cups flour
1 teaspoon baking soda
½ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Spray 3 mini loaf pans or 1 large loaf pan with nonstick spray.
- In a medium bowl, combine the diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract. Stir until the ingredients are well combined.
- Stir in the flour, baking soda, and salt. Mix until just combined; be careful not to overmix.
- Pour the batter evenly into the prepared pans.
- Place the pans in the preheated oven and bake:
• For mini loaves, bake for 25-30 minutes.
• For a large loaf, bake for 50-55 minutes.
Check for doneness by inserting a toothpick into the center of the bread—if it comes out clean, the bread is ready. - Remove the bread from the oven and allow it to cool slightly before slicing and serving. Enjoy!
Notes
For extra warmth, add ½ teaspoon of cinnamon or nutmeg to the batter.
