Description

Southern Banana Cobbler combines sweet caramelized bananas with a rich, buttery base and a crunchy oat-and-pecan streusel topping. This comforting and indulgent dessert is perfect for any occasion, from cozy weeknight dinners to holiday feasts.


Ingredients

For the Streusel Topping:

¾ cup packed light brown sugar

½ cup self-rising flour

½ cup unsalted butter, softened

1 cup uncooked old-fashioned oats

½ cup chopped pecans

For the Cobbler Base:

1 cup self-rising flour

1 cup sugar

1 cup milk

2 tsp banana extract (optional)

½ cup melted butter

4 ripe bananas, sliced


Instructions

  1. Preheat the Oven:

    • Set your oven to 375°F (190°C). Grease a 2-quart or 9×9-inch baking dish.

  2. Make the Streusel Topping:

    • In a bowl, mix brown sugar, self-rising flour, and butter until the mixture is crumbly.

    • Stir in the oats and chopped pecans, then set aside.

  3. Prepare the Cobbler Base:

    • In a separate bowl, mix the self-rising flour, sugar, milk, melted butter, and banana extract (if using) until smooth.

  4. Assemble the Cobbler:

    • Pour the cobbler batter into the prepared baking dish.

    • Top with sliced bananas and sprinkle the streusel topping evenly over the top.

  5. Bake:

    • Bake for 45-50 minutes, or until golden brown and bubbly. Let the cobbler cool for 10-15 minutes before serving.


Notes
