These Smash Burgers with Smoky Mayo Sauce are everything you love in a burger—crispy edges, juicy beef, melty cheese, and a bold, creamy sauce. Ingredients

For the Smash Burgers:

1 lb ground beef (80/20 blend recommended)

Salt and pepper, to taste

4 burger buns

4 slices American cheese

1 tbsp butter (for toasting buns)

For the Smoky Mayo Sauce:

4 tbsp mayonnaise

2 tbsp finely chopped smoked turkey

1 tsp Dijon mustard

1 tsp smoked paprika

1 tsp lemon juice


Instructions

  • Make the Smoky Mayo Sauce:
    In a small bowl, combine mayonnaise, smoked turkey, Dijon mustard, smoked paprika, and lemon juice. Mix well and refrigerate while you prepare the burgers.

  • Toast the Buns:
    Heat a skillet over medium heat. Add butter and toast the buns, cut side down, until golden brown. Set aside.

  • Cook the Smash Burgers:
    Divide ground beef into 4 equal portions and roll into loose balls. Preheat a cast-iron skillet over medium-high heat.
    Place each ball on the skillet and smash flat with a spatula. Season with salt and pepper. Cook for 2-3 minutes until the edges are crispy. Flip, top with cheese, and cook another 1-2 minutes.

  • Assemble the Burgers:
    Spread smoky mayo sauce on the bottom buns. Place the cheesy patties on top. Add your favorite toppings (lettuce, tomato, pickles), top with the other bun, and serve hot.


Notes

For ultra-crispy edges, press firmly when smashing the patties, and don’t move them while they cook.

Make sure the skillet is very hot before smashing the burgers to get a proper sear.
