Ingredients

1 lb ground beef or sausage

1 onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (15 oz) tomato sauce

4 cups beef broth

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

8 lasagna noodles, broken into bite-sized pieces

1 tablespoon Italian seasoning

Salt and pepper, to taste

Instructions

  • In a skillet over medium heat, brown the ground beef or sausage, breaking it up; drain fat and transfer to the slow cooker.

  • Sauté onion in the same skillet until translucent (about 3-4 minutes). Add garlic and cook another 30 seconds; transfer to the slow cooker.

  • Add crushed tomatoes, tomato sauce, and beef broth to the slow cooker; stir well.

  • Season with Italian seasoning, salt, and pepper.

  • Stir in broken lasagna noodles.

  • Cover and cook on low for 4-6 hours or high for 2-3 hours.

  • About 10 minutes before serving, stir in ricotta and mozzarella cheeses until melted.

  • Serve hot, with optional toppings like extra cheese or fresh herbs.

Notes

For a spicier version, add red pepper flakes.

To make it vegetarian, use plant-based meat and vegetable broth.

Gluten-free noodles can be substituted for a gluten-free version.

For extra creaminess, add a splash of heavy cream before serving.
