Description

Easy Biko is a traditional Filipino dessert made with glutinous rice, coconut milk, and brown sugar, creating a rich, creamy, and chewy treat. It’s a simple yet delicious dessert perfect for any occasion.


Ingredients

Main Ingredients:

2 cups glutinous rice

1 can (400 ml) coconut milk

1 cup brown sugar

1/4 teaspoon salt

1 cup coconut cream (optional, for topping)


Instructions

  1. Rinse the Rice: Rinse the soaked glutinous rice under cold water until the water runs clear. Then, steam the rice for about 30 minutes, or until the rice is tender but chewy.
  2. Prepare the Coconut Mixture: In a separate pot, combine coconut milk, brown sugar, and salt over medium heat. Simmer for about 10 minutes, allowing the flavors to meld together.
  3. Mix with Rice: Once the rice is done steaming, mix two-thirds of the coconut mixture with the rice until evenly coated. Transfer the rice mixture into a greased baking pan.
  4. Bake the Biko: Pour the remaining coconut mixture over the top of the rice. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the top is set and golden brown.
  5. Cool and Serve: Allow the Biko to cool completely before slicing into squares. This will help it firm up and make it easier to serve.

Notes

Customize your Biko with toppings like latik (coconut cream reduction) or fresh fruits like mango or banana for added flavor and texture.

If vegan, use coconut cream for the topping instead of any dairy-based creams.
