Description
These Shrimp Tacos with Mango Salsa are a delicious and fresh meal featuring juicy shrimp, sweet mango salsa, and a creamy cilantro avocado dressing, all wrapped in a warm tortilla.
Ingredients
½ teaspoon chili powder
¼ teaspoon paprika
¼ teaspoon kosher salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
2 tablespoons olive oil
1 pound raw shrimp, peeled, deveined, and tails removed
6 tortillas, warmed (corn or flour)
Mango Salsa (recipe below)
Lime Cilantro Avocado Dressing (recipe below)
Instructions
- In a medium bowl, combine the chili powder, paprika, garlic powder, salt, and black pepper.
- Pat the shrimp dry and toss them in the spice mixture. Let the shrimp sit for 10-15 minutes to absorb the flavors.
- Heat olive oil in a frying pan over medium-high heat. Add shrimp in a single layer and cook for 1-2 minutes per side until opaque white with slight pink accents. Remove from skillet and set aside.
- Warm tortillas over a gas stovetop flame or on a skillet until golden brown. Set aside.
- Assemble tacos by placing 3-4 shrimp in each tortilla. Top with mango salsa and drizzle with cilantro avocado dressing.
- Serve immediately with lime wedges for a burst of citrus.
Notes
For a vegetarian option, replace shrimp with grilled vegetables like bell peppers, zucchini, or portobello mushrooms.
Add finely chopped jalapeños or hot sauce to the mango salsa for extra heat.
Try different proteins like grilled chicken, fish, or ground beef for a variety of taco options.
