Description

Shrimp Ceviche is a light and refreshing dish featuring tender shrimp marinated in zesty lime juice, combined with fresh vegetables and herbs. This no-cook appetizer is perfect for warm weather and pairs wonderfully with tortilla chips, tostadas, or tacos.


Ingredients

  • 12 ounces cooked shrimp, peeled, deveined, tail removed
  • ½ cup fresh lime juice
  • 2 Roma tomatoes, diced
  • 1 medium red onion, diced
  • 2 medium jalapeño peppers, seeded and diced
  • ¼ cup cilantro, chopped
  • 2 green onions, diced
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the Shrimp: Chop the cooked shrimp into bite-sized pieces and place them in a medium bowl.
  2. Marinate: Pour fresh lime juice over the shrimp, ensuring they are well-coated. Let sit for 10 minutes.
  3. Combine Ingredients: Add diced tomatoes, red onion, jalapeños, cilantro, green onions, and salt. Mix well.
  4. Chill: Cover and refrigerate for 30 minutes to 1 hour.
  5. Serve: Enjoy chilled with tortilla chips, on tostadas, or as desired.
