Description

These Seven Layer Chicken Burritos are the ultimate meal for any occasion, combining seasoned chicken, black beans, rice, and your favorite toppings in a hearty, flavorful wrap. Customizable and easy to make, these burritos are perfect for family dinners, meal prep, or a quick weeknight meal. With layers of cheese, guacamole, and sour cream, these burritos will become a family favorite.

Ingredients

1 1/2 cups cooked rice

1 cup black beans, rinsed and drained

2 cups shredded cooked chicken (rotisserie chicken works well)

1 cup shredded cheese (cheddar, Monterey Jack, or your choice)

1/2 cup guacamole

1/2 cup diced tomatoes

1/4 cup sour cream

1 tablespoon taco seasoning

4 large flour tortillas

Salt and pepper, to taste

Fresh cilantro, for garnish

Instructions

  • Prepare the ingredients: Warm the tortillas in a dry skillet for 30 seconds on each side to make them pliable. Season the shredded chicken with taco seasoning.

  • Assemble the burritos: Lay a tortilla flat on a surface. In the center, layer the following ingredients:

    • 1/4 cup rice

    • 1/4 cup black beans

    • 1/2 cup shredded chicken

    • 1/4 cup shredded cheese

    • 1/4 cup guacamole

    • 1/4 cup diced tomatoes

    • 1/4 cup sour cream

    • Sprinkle with salt and pepper to taste.

  • Roll the burrito: Fold in the sides of the tortilla and roll tightly from one end to the other to enclose all the ingredients.

  • Serve: Cut the burrito in half, garnish with fresh cilantro, and serve with extra guacamole, salsa, or chips on the side for added crunch.

Notes

  • Add corn for a sweet crunch or spicy jalapeños for extra heat.

  • Make it dairy-free by skipping the cheese and sour cream or using dairy-free alternatives.

  • Leftover burritos can be wrapped and stored for easy meal prep.
