Description

Sesame Prawn Toast is a mouthwatering appetizer that combines succulent prawn paste with a crispy sesame seed crust, fried to golden perfection. A savory blend of ginger, garlic, and spring onions enhances the dish, making it a crunchy, flavorful delight.


Ingredients

200g raw peeled prawns

2 spring onions, finely chopped

1 tsp grated fresh ginger

1 garlic clove, minced

1 tbsp soy sauce

1 tsp sesame oil

1 tsp cornflour

4 slices white bread, crusts removed

2 tbsp sesame seeds

Vegetable oil, for frying


Instructions

  1. Place prawns, spring onions, ginger, garlic, soy sauce, sesame oil, and cornflour into a food processor. Pulse until you get a coarse paste with some texture remaining.
  2. Cut each slice of bread into four triangles. Spread a generous layer of prawn paste evenly over one side of each bread triangle.
  3. Pour sesame seeds onto a plate, then press the prawn-coated side of each triangle into the seeds to cover them completely.
  4. Heat 2cm of vegetable oil in a deep frying pan over medium-high heat. The oil should be hot but not smoking (around 180°C / 350°F).
  5. Carefully fry the prawn toasts in batches for 2-3 minutes per side, until golden brown and crispy. Be gentle when flipping to avoid breaking them.
  6. Remove the toasts with a slotted spoon and drain them on kitchen paper. Serve immediately with sweet chili sauce or soy sauce for dipping.

Notes

If using frozen prawns, ensure they are thawed and any excess water is drained.

For extra texture, try using whole wheat bread or sourdough.

For a vegetarian option, substitute prawns with finely chopped mushrooms or tofu.

If you prefer, bake the prawn toasts at 375°F (190°C) for 15-20 minutes, but the texture will differ slightly.
