Description

Savory Caprese Bread combines the delicious flavors of mozzarella, sun-dried tomatoes, and fresh basil into a soft, savory loaf. Perfect for any meal or as an appetizer.


Ingredients

2 large eggs

½ cup whole milk

¼ cup olive oil

2 tablespoons plain Greek yogurt or sour cream

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

¼ teaspoon garlic powder

¾ cup shredded mozzarella cheese

⅓ cup chopped sun-dried tomatoes (in oil, drained)

¼ cup chopped fresh basil

Optional: pinch of black pepper or red pepper flakes for a kick


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×4-inch loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, milk, olive oil, and yogurt until smooth.
  3. In a separate bowl, stir together the flour, baking powder, salt, and garlic powder.
  4. Add the dry ingredients to the wet mixture. Stir gently until just combined — be careful not to overmix. Fold in the shredded mozzarella, sun-dried tomatoes, and basil. If you’re using black pepper or red pepper flakes, add them in as well.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack. Slice and serve warm or at room temperature.

Notes

If using a different cheese like Parmesan or feta, adjust the texture by adding a little extra yogurt for creaminess.

For a more intense basil flavor, add a few extra tablespoons of fresh basil.

Feel free to substitute dried basil if fresh isn’t available, but fresh basil gives a brighter flavor.

Experiment with different vegetables like roasted peppers or spinach for added color and flavor.
