Description
Savory Caprese Bread combines the delicious flavors of mozzarella, sun-dried tomatoes, and fresh basil into a soft, savory loaf. Perfect for any meal or as an appetizer.
Ingredients
2 large eggs
½ cup whole milk
¼ cup olive oil
2 tablespoons plain Greek yogurt or sour cream
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
¼ teaspoon garlic powder
¾ cup shredded mozzarella cheese
⅓ cup chopped sun-dried tomatoes (in oil, drained)
¼ cup chopped fresh basil
Optional: pinch of black pepper or red pepper flakes for a kick
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×4-inch loaf pan with parchment paper.
- In a large mixing bowl, whisk together the eggs, milk, olive oil, and yogurt until smooth.
- In a separate bowl, stir together the flour, baking powder, salt, and garlic powder.
- Add the dry ingredients to the wet mixture. Stir gently until just combined — be careful not to overmix. Fold in the shredded mozzarella, sun-dried tomatoes, and basil. If you’re using black pepper or red pepper flakes, add them in as well.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack. Slice and serve warm or at room temperature.
Notes
If using a different cheese like Parmesan or feta, adjust the texture by adding a little extra yogurt for creaminess.
For a more intense basil flavor, add a few extra tablespoons of fresh basil.
Feel free to substitute dried basil if fresh isn’t available, but fresh basil gives a brighter flavor.
Experiment with different vegetables like roasted peppers or spinach for added color and flavor.
