Description

Ingredients

  • 2 tbsp olive oil
  • 1 lb mushrooms (cremini, button, or a mix), sliced
  • 4 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Optional Garnish: fresh parsley or red pepper flakes

Instructions

1. Prepare the Ingredients:

  1. Clean and slice the mushrooms evenly.
  2. Rinse and drain the spinach.
  3. Mince the garlic and extract the lemon juice.

2. Sauté the Mushrooms:

  1. In a large skillet, heat olive oil over medium heat until shimmering.
  2. Add mushrooms in a single layer and cook without stirring for 3–4 minutes to allow browning.
  3. Stir occasionally and cook for another 5–7 minutes until softened and browned.

3. Add Garlic & Spinach:

  1. Stir in the minced garlic and sauté for 1–2 minutes until fragrant.
  2. Gradually add spinach, tossing to combine, and cook for 2–3 minutes until wilted.

4. Season & Serve:

  1. Season with salt and pepper to taste.
  2. Add lemon juice and toss to combine.
  3. Garnish (if desired) with fresh parsley or red pepper flakes.
