Description

Sausage Tortellini Soup is a creamy, savory meal packed with sausage, cheese-filled tortellini, and nutritious kale. Ingredients

  • 1 pound Italian sausage
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon hot sauce (optional)
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • 1 package cheese-filled tortellini
  • Salt, to taste (optional)
  • Red pepper flakes for garnish

Instructions

  • Cook the Sausage: In a large pot, brown the sausage over medium heat. Add chopped onions and garlic, and cook until softened.
  • Add Flour and Seasonings: Stir in the flour and cook for 1-2 minutes. Then add basil, oregano, hot sauce, mustard powder, and black pepper, mixing well.
  • Add Liquids: Pour in chicken broth and heavy cream. Bring to a boil and then reduce heat to a simmer.
  • Add Kale and Tortellini: Stir in the kale and cheese tortellini. Let cook for 3-5 minutes, or until the tortellini is tender and the kale is wilted.
  • Taste and Season: Taste the soup and add salt if needed. Serve in bowls, and garnish with red pepper flakes for a little extra heat.

Notes

  • Greens: If you don’t have kale, spinach works as a great substitute. Add it after the tortellini has cooked, and allow it to wilt in the soup.
  • Spice Level: Adjust the spice by adding more hot sauce or red pepper flakes if desired.
  • Protein Options: Use chicken sausage or turkey sausage for a leaner version, or substitute with ground turkey.
  • Dairy-Free Option: Replace the heavy cream with coconut cream or any dairy-free milk alternative.
