Description

This creamy Sausage Tortellini Soup is the perfect comfort food for chilly nights. Packed with savory sausage, tender tortellini, and healthy kale, this one-pot meal is quick, delicious, and ready in just 30 minutes. The rich broth and creamy texture make it an ideal dish for busy weeknights or cozy weekend dinners.

Ingredients

  • 1 lb sausage (Italian or breakfast)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp hot sauce
  • 1 tsp mustard powder
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups kale, chopped (or spinach)
  • 1 package cheese tortellini (refrigerated)
  • Red pepper flakes (optional, for serving)

Instructions

  • Cook the sausage: In a large pot, cook the sausage, onions, and garlic over medium heat until the sausage is browned and the onions are soft.
  • Make the base: Add the flour and cook for 1-2 minutes, stirring continuously.
  • Add seasonings: Stir in basil, oregano, hot sauce, mustard powder, and pepper.
  • Add liquids: Pour in the chicken broth and heavy cream, bring the soup to a boil, then reduce to a simmer.
  • Add the vegetables and tortellini: Add the kale and tortellini, cooking for 3-5 minutes until the tortellini is tender.
  • Finish: Taste and adjust seasoning if needed. Serve with a pinch of red pepper flakes for a spicy kick.

Notes

  • Vegetarian Option: Substitute the sausage with plant-based sausage or extra veggies like zucchini and bell peppers.
  • Spinach Substitute: Use spinach instead of kale for a milder flavor.
  • Spicy Kick: Increase the hot sauce or add a chopped jalapeño for extra heat.
