Ingredients
1 pound of your favorite sausages (Italian, bratwurst, etc.)
1 bell pepper (any color, diced into chunks)
1 onion (cut into wedges)
1 zucchini (sliced into rounds)
1 cup cherry tomatoes
2 tablespoons olive oil
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and black pepper to taste

Instructions
- Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Cut Ingredients: Dice the sausages into 1-inch pieces, chop the bell pepper and onion into chunks, and slice the zucchini into rounds.
- Season the Vegetables: In a bowl, mix olive oil, paprika, garlic powder, onion powder, salt, and black pepper. Toss the bell pepper, onion, zucchini, and cherry tomatoes in the seasoning until well coated.
- Assemble Skewers: Thread a piece of sausage onto each skewer, followed by a chunk of bell pepper, an onion wedge, a zucchini slice, and a cherry tomato. Repeat the pattern until the skewer is full, leaving space at each end.
- Preheat the Grill: Heat the grill to medium-high heat.
- Grill the Skewers: Place the skewers on the grill. Cook for 10-15 minutes, turning occasionally, until the sausages are cooked through and have nice grill marks.
- Check Doneness: Ensure the sausages reach an internal temperature of 160°F (71°C). Adjust cooking time for different sausages.
- Remove from Grill: Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
Notes
For extra heat, add jalapeño slices or red pepper flakes to the skewers.
For a vegetarian option, use marinated tofu or veggie sausage.
Feel free to add other vegetables like mushrooms, eggplant, or asparagus.
